Nasi Lemak is a dish common in Malaysia, Singapore, Brunei and also Southern Thailand. Nasi Lemak means 'rice in coconut cream' in the Malay language. A typical nasi lemak is usually serve with anchovy, peanut, fried/boil egg and sambal. You can also serve it with fried chicken or fish. Nasi Lemak is usually serve in banana leaf for the fragrance.
Ingredients for the rice:
2 cups of rice
2 screwpine leaves ( aka pandan leaves )
A pinch of salt
About 2 or 1 1/2 pack of coconut milk.
Method:
Cook the rice in a rice cooker till it is cook.
Side dishes:
Fried anchovy/chicken/fish
Fried or boil egg
Fried peanut
Cucumber
Ingredients for sambal:
1/2 red onion
1 clove garlic
4 shallots
10 dried chillies
1 teaspoon of belacan (prawn paste)
1/4 teaspoon of salt
1 tablespoon of sugar
Method:
1. Pound the prawn paste together with shallots, garlic, and deseeded dried chilies with a mortar and pestle. You can also grind them with a food processor.
2. Heat up the pan with some oil and fried the grind ingredients.
3. Add salt and sugar.
4. Simmer on low heat until thickens. Set aside.
