Penang Char Hor Fun

Hor Fun is a famous dish in Singapore and Malaysia. There are many variations of hor fun but Penang hor fun is one of the best.

Ingredients:
1/2 pack hor fun or flat rice noodles (32 oz pack)
1/2 pack vermicelli (14 oz pack)
3 tablespoons oil
1 tablespoon soy sauce
1 tablespoon sweet soy sauce
Toppings:
12 shrimp (peeled and deveined)
12 bay scallops
12 thin pieces of fish cake
1/2 can chicken broth (14 oz can)
1 1/4 cup water
3 cloves garlic (minced)
1 stalk of spring onion (chopped)
Starch:
2 tablespoons corn flour
1/4 cup water
Seasoning:
2 tablespoons oyster sauce
1/2 tablespoon soy sauce
1/8 teaspoon fish sauce
1/2 teaspoon sugar
2 dashes white pepper powder
Salt to taste
Method:

  1. Soak the vermicelli in warm water for 15 minutes or until soft. Drain the water and set aside.
  2. Break the flat rice noodles off by peeling the layers. Set aside.
  3. Heat up a wok and add 1 1/2 tablespoon of cooking oil. Toss in the vermicelli and do a quick stir. Add 1/2 tablespoon of soy sauce and 1/2 tablespoon of sweet soy sauce and continue to stir the vermicelli until the soy sauce and sweet soy sauce are well blended with the vermicelli. Continue to stir until the vermicelli are lightly burned or charred. Dish up and set aside.
  4. Repeat the same for the flat rice noodles. Dish up and set aside.
  5. Add some oil in a wok and stir-fry the minced garlic until fragrant.
  6. Add in the shrimp, bay scallops, fish cake and do a quick stir.
  7. Add the chicken broth and 1 1/4 cup of water immediately.
  8. Add in all the seasoning and bring it to boil.
  9. Add in the starch mixture to thicken the gravy.
  10. On a plate, place the fried vermicelli and flat rice noodles equally.
  11. Pour the gravy and toppings on the noodles and vermicelli.
  12. Sprinkle the spring onion.

Chocolate Chip Cookie

A chocolate chip cookie is a drop cookie that originated in the United States and features chocolate chips as its distinguishing ingredient. The traditional recipe combines a dough composed of butter and both brown and white sugar with semi-sweet chocolate chips. Variations include recipes with other types of chocolate or additional ingredients, such as nuts or oatmeal.

Ingredients:

½ cup (110 g) light brown sugar
½ cup plus 1 tablespoon (120 g) sugar
1 large egg
1¾ cups (220 g) flour
2 tablespoons unsweetened cocoa powder
½ teaspoon baking soda
¾ teaspoon baking powder
½ teaspoon salt
1¼ sticks (140 g) butter
1 teaspoon vanilla extract
6 oz (170 g)semisweet chocolate chips
Salt

Method:

  1. Cream butter with sugar until light and fluffy using an electric mixer.
  2. Add the egg and vanilla and mix well.
  3. Add baking soda, baking powder, salt, sifted cocoa powder, and sifted flour and mix well.
  4. Add chocolate chips.
  5. Place the cookie dough in the refrigerator until next day.
  6. Preheat oven to 350 deg F (180 deg C).
  7. Line a baking sheet with parchment paper or a nonstick baking mat.
  8. Drop by rounded large spoonfuls of dough (as big as golf balls) onto the cookie sheet.
  9. Sprinkle lightly with sea salt.
  10. Bake the chocolate chip cookies until light brown but still soft, about 15 to 20 minutes.
  11. Allow cookies to cool  for a few minutes.

Mama Burger

A burger is a sandwich consisting of a cooked patty of ground meat, (usually beef, but occasionally pork, turkey, or a combination of meats) placed between two buns. Hamburgers are often served with lettuce, bacon, tomato, onion, pickles, cheese and condiments such as mustard, mayonnaise, ketchup and relish.

Ingredients:

  • 1 egg
  • pinch of salt
  • black pepper to taste
  • 1lb ground beef
  • 3 tbs fine dry bread crumbs
  • 4 slices of cheese
  • 4 burger buns
Method:

  • Whisk together the egg, salt and black pepper in a large bowl. In a separate bowl mix the breadcrumbs into the beef using a fork or your hands. Then simply mix the two mixtures together and shape into 4 burgers using your hands.
  • As with most burger recipes you have the choice of grilling or shallow frying your burgers. The cooking time depends on the thickness but for an average size burger it should take 5-7 minutes on each side.
  • Add one cheese slice as soon as you take your burgers off the heat to allow each slice to melt. Serve with your own choice of topping.

Char Kway Teow

Char kway teow, is a popular noodle dish in Indonesia, Malaysia and Singapore. It is made from flat rice noodles and stir-fried over very high heat with light and dark soy sauce, chilli, a small quantity of belachan, tamarind juice, whole prawns, deshelled cockles, bean sprouts and liberally chopped up Chinese chives

Ingredients: 

  • Oil -- 1/4 cup
  • Garlic, minced -- 2-3 cloves
  • Sambal (chili paste) -- 1-2 tablespoons
  • Shrimp -- 1/2 pound
  • Fresh rice noodles -- 1 pound
  • Soy sauce -- 1/4 cup
  • Brown sugar -- 1 tablespoon
  • Eggs, beaten -- 2
  •  Bean sprouts 
  • Scallions, chopped -- 3-4 each
Method:

  1. Heat the oil in a wok or heavy-bottomed pot over high flame. Add the garlic and sambal  and stir fry for about 30 seconds. Add the shrimp and stir fry until shrimp is almost cooked through.
  2. Reduce heat to medium and stir in the rice noodles, tossing them to heat through. Scrape the bottom of wok or pot frequently to minimize sticking. Then stir in the soy sauce and brown sugar and stir in to season the noodles.
  3. Scoop the noodles away from the center of the wok or pot and pour the beaten egg into the cleared space. Let the egg cook until just set, and then stir into the noodles.
  4. Add the sprouts and scallions and continue to cook, tossing frequently, until the sprouts are just cooked through. Adjust seasoning and serve.

Nasi Lemak

Nasi Lemak is a dish common in Malaysia, Singapore, Brunei and also Southern Thailand. Nasi Lemak means 'rice in coconut cream' in the Malay language. A typical nasi lemak is usually serve with anchovy, peanut, fried/boil egg and sambal. You can also serve it with fried chicken or fish. Nasi Lemak is usually serve in banana leaf for the fragrance.

Ingredients for the rice:

2 cups of rice
2 screwpine leaves ( aka pandan leaves )
A pinch of salt
About 2 or 1 1/2 pack of coconut milk.

Method:

Cook the rice in a rice cooker till it is cook.

Side dishes:

Fried anchovy/chicken/fish
Fried or boil egg
Fried peanut
Cucumber

Ingredients for sambal:

1/2 red onion
1 clove garlic
4 shallots
10 dried chillies
1 teaspoon of belacan (prawn paste)
1/4 teaspoon of salt
1 tablespoon of sugar

Method:

1. Pound the prawn paste together with shallots, garlic, and deseeded dried chilies with a mortar and pestle. You can also grind them with a food processor.
2. Heat up the pan with some oil and fried the grind ingredients.
3. Add salt and sugar.
4. Simmer on low heat until thickens. Set aside.
